Oats, Carrots, and Love. Let me tell you, this recipe is the simplest, most delicious recipe you'll ever find. Its story begins with a pile of shredded carrots. After that, oats, seeds, and a bunch of herbs and veggies were thrown into the shredded pile. We weren’t sure how it would turn out, but the taste of savory oats mixed together with roasted sunflower seeds and warm shredded carrots turned out to be magically and most of all, surprisingly delicious. And the best: they can be so versatile! We hope you will be as thrilled as we were and still are! So, caution, you might fall in love with these guys! ;)
Oat Patties Ingredients
Large Oats - They make the patties incredibly smooth but at the same time keep them slightly coarse.
Hot Water - Combined with the oats, hot water is essential to thicken the oats and to keep the patties in shape
Veggies - For this recipe we used mostly carrots, peas and parsley but it is incredibly easy to make new variations!
Onions - They give them an extra kick!
Salt & Spices - When I think about it, those patties only really need salt to them. We often use Himalayan salt but be sure to use your favorite!
Ingredients
Easy to Medium - 18 patties - 40 minutes
base
2 ½ cups oats
½ cup onions, chopped
1 cup fresh herbs ( parsley, cilantro)
1 cup seeds (sunflower, flax seed)
2 ½ cup hot water
½ tbsp salt

1 cup peas (frozen)
2 ½ cup shredded carrots
Instructions
Place the oats in a large bowl and pour the hot water over them, let it sit for a few minutes to thicken.
In the meantime, shred your veggies either by hand or easily with a food processor.
Now it's time to mix everything together.
Put a large pan onto the stove and add plenty of olive oil to it
Scoop ¼ to ½ cup of the patty mixture into the hot pan and cook until they are golden brown
Put the burgers together with the side dishes you want.
Oat Patties Tips
Make your own variations! - We tried out many different variations and so can you! You may want to use mainly peas and kale to make some green patties or rather beets and red cabbage for red/purple variations or simply carrots for orange ones. It's up to you - you are the CHEF! Trust us, there are a ton of variations you can explore, so make sure to write your favorite into the comment section :))
Freeze the extras - These patties freeze perfectly for a couple of days or even weeks. Leave in the refrigerator overnight to thaw or let stand at room temperature for an hour or two when you want to eat them.
Have an extra eye on the timing - These patties are easily overcooked. Cook them until they are golden brown on both sides.
The correct shape - If you have trouble putting the patties together just add about 3 tbsp of oat flour or chickpea flour for better consistency.
Serving & side dishes - There are a lot of different dishes you could add these patties to. Some of our suggestions that you could try: Quinoa, broccoli and patties as a side, or patties as the main with our tasty sunflower sauce and cabbage salad.
