Pea Cilantro Pesto

It's always fun creating and experimenting with a new recipe, but for me creating a new pesto is especially rewarding because not only is it fun and quick to make, but it also makes a simple meal taste even better. This pesto calls for some peas, cilantro, olive oil, garlic, salt and pepper and while I love this mixture I know there are some people who either hate or love cilantro. Obviously, I am one of the people who loves cilantro and Isabel is too but when it comes to Linn, well there is a big disagreement. That’s why I have to say that this pesto is probably only working for you if you are on the ‘love-cilantro’ side. That being said, I hope you are on that side because this pesto is incredibly easy to make and always lets my meals taste ten times better.




Pea Cilantro Pesto Ingredients

  • Cilantro - Love or hate it, this recipe calls for cilantro. It makes the pesto taste so fresh and flavorful.

  • Peas - The peas make the pesto creamy and also very green ;).

  • Garlic - It’s pungent taste makes this recipe even better!

  • Salt and Pepper - Salt makes the other ingredients pop.


Pea Cilantro Pesto Tips

  • For Cilantro Haters - I would guess this pesto works well with parsley too, but I've never tried it myself.

  • Extra Creaminess - To make the pesto creamier, simply soak ¼ cup sunflower seeds in hot water for about 10 minutes, rinse it and add them to the ingredient list.

  • Blend - Blend your ingredients with an immersion hand blender.

  • Peas - Either use fresh peas or thaw frozen ones.

  • Texture - If the pesto is still too firm add 1 or 2 tbsp olive oil and blend again.



Ingredients

Easy - 3-4 servings - 15 minutes 
  • 3/4 cup Peas

  • 3/4 cup fresh Cilantro, chopped

  • 2-3 Garlic Cloves

  • 4 tbsp Olive Oil

  • 2 tbsp Water

  • ½ tsp Salt

  • 1 tsp Black Pepper

**1/4 cup Soaked Sunflower Seeds (see Tips)


Instructions

  1. Measure out all the ingredients.

  2. Pour all ingredients in a bowl and puree with an immersion hand blender until creamy.

  3. Serve it with a delicious meal and enjoy!
