I find overnight oats a refreshing breakfast and always like to experiment with some new ideas but this recipe is one of my favorites now! It just tops every other overnight oat recipe I have ever tried and makes me wanna try it again and again. The funny thing, though, is that I am usually not a big fan of coconut shreds or coconut in general. However I absolutely love it this time! The combination of grated apple, which makes the whole breakfast taste so juicy, desiccated coconut, which gives it a slightly sweet taste, and yogurt is the ultimate combination for an almost tropical breakfast. I don't know about you, but this combo is already calling me into the kitchen, but if you're not convinced yet, there is one more thing. This breakfast can be prepared in advance and is made in just 5 minutes, making it ideal for a 'to-go' breakfast.
Coconut Apple Overnight Oats Ingredients
These overnight oats start with some basic ingredients that we use as a base - oats and plant-based milk. To make this mixture special, let's add these ingredients;
Shredded Apple - The apple makes this breakfast so refreshing and also gives it a slightly sweeter taste.
Desiccated Coconut - It’s what gives these overnight oats a pleasant sweetness and also ensures a nuttier taste.
Plant Based Yogurt - The key ingredient for creating a creamier texture.
Chia Seeds - They thicken in the refrigerator overnight and bind all the ingredients.
Coconut Apple Overnight Oats Tips
Oat Type - Large rolled oats are the best choice for overnight oats. They soak up the liquid overnight, leaving behind a creamy, but not mushy, texture.
Garnish - To make your breakfast look even better, top it off with some fresh apple slices, more coconut and some nuts - like almonds, pecans or even cashews.
Ingredients
1 cup Oats
1 half Apple, grated
1 tbsp Plant-Based Yogurt
1 tbsp + 1 tsp Desiccated Coconut
½ cup + 2 tbsp Plant-Based Milk
1 tsp Chia seeds
Instructions
Grate your apple and measure out all the other ingredients.
Then, mix all of the ingredients together in a mason jar or airtight container.
Place the jar into the refrigerator overnight.
The next morning, top with some extra apple pieces and some nuts and enjoy!
