You might be familiar with going to the grocery in search of delicious vegan popsicles. To be on the same page though, I’m not talking about those water-fruit popsicles, no no no, I’m talking about the milky ones! Yet all you will find is nothing more than some 'okay' tasting non-dairy popsicles or flavors that you might not fully like surrounded by lots of fabulous looking dairy popsicles. Too bad, right…. Wait until you've tried this recipe. We came up with this super good combo of peanut butter and dark cocoa to avoid that sad shopping trip and to cheer up your mood. Well, we think we have just found the perfect solution.This combination is really as delicious as it sounds because it is creamy, full of flavor, and the union of peanut butter and chocolate is perfectly nutty and chocolaty. I mean what is there not to love?! However, if you're just not a huge peanut butter fan, don't worry, the texture of the peanut butter is more distinctive than the actual peanut flavor. That being said, I think you now have the ultimate homemade treat that you must try!
Chocolate Peanut Popsicle Ingredients
Peanut Butter - Feel free to swap out the peanut butter for any other nut butters. It will definitely taste different as each nut/seed butter has its own flavor, but no matter how you ultimately choose, each combination is sure to taste just as good as the other.
Cacao - The taste of the filling varies depending on the choice of cocoa.
Dark Chocolate (Cover) - We used 90% dark chocolate and it matched perfectly with our dark cocoa powder, however you can use any other chocolate! But don’t leave it out!
Peanuts - Crack some peanuts and either mix them with your chocolate coat right away or sprinkle them on top of your ice cream. This will add some extra crunch.
Chocolate Peanut Popsicle Tips
Taste Check - Always taste new recipes to know if anything needs to be added.
Chocolate - Pour as much chocolate over each ice cream as you want. Remember, however, that if you choose to cover each popsicle with more chocolate than we do, you will also have to heat more chocolate.
Work fast while garnishing - After your ice cream base has been frozen enough to pour over the chocolate coating, work fast while sprinkling the cracked peanuts on top of your ice cream to avoid them from falling off. This will only happen as the chocolate cover hardens as it lays on top of the cold ice cream.
Equipment - For this whole process you will need silicone popsicle molds, wooden sticks and a tray with non-stick parchment paper.
Ingredients
Easy - 6 Popsicle Molds - 4 1/2 hours
400 ml canned Full-Fat Coconut Milk
⅛ cup Maple Syrup
⅓ cup Cacao Powder
¼ cup Peanut Butter
50 g Dark Chocolate
2 tbsp Peanut Butter
(Roasted) Peanuts, crushed
Instructions
Measure out all the ice cream base ingredients and throw them into a blender. Blend until smooth.
Now pour your filling into the popsicle molds and insert the popsicle sticks.
Place the mold(s) on a cutting board to avoid spilling and put it into the freezer for about 4 hours.
Just before the popsicles are ready, heat the chocolate. Add the peanut butter to the chocolate as soon as it has melted. Stir. Additionally, crack some peanuts so that they are ready for garnishing.
Also, prepare a tray with non-stick parchment paper.
To remove each ice cream from the mold, let the mold rest on the counter for a few seconds (no longer than ½ minute!). Then take each popsicle and gently press it out of the mold laying them onto the tray.
Now either drizzle your chocolate coating over the ice cream or completely immerse the popsicle in the chocolate mixture. Then quickly, sprinkle some cracked peanuts on top of the ice creams.
For the last time, put your popsicles back in the freezer for about 5 to 10 minutes (this step is only there to prevent the ice cream base from melting. However, if it doesn't and your popsicles are still pretty solid, you can skip this step).
Take them out and they are ready to enjoy!
