Banana Sunflower Seed Butter Muffin

Without sounding like I am bragging, these muffins are just too good. We made these when we were looking for a quick snack that didn't use too many ingredients, and I think we just found it. These muffins are incredibly simple, delicious and healthy as well. However, the best part about these muffins is that they can’t go much wrong. Seriously, you technically don’t need to worry about anything. You can stir the batter as much and as long as you want or swap the seed butter and the muffins will still turn out awesome! When we put them into the oven I honestly was a little scared that this would be a recipe that sounds a lot greater than it actually is, but I was wrong about that. Because when we finally took them out of the oven they were double in size and smelled soooo good! True enough, the bananas will take some time, but if you wait patiently, your ultimate treat will be ready!



Banana Sunflower Seed Butter Muffin Ingredients

  • Ripe Bananas - The browner, the better. It also helps reduce the likelihood of food being thrown away. Additionally, bananas serve as natural sweeteners, which is simply great for this recipe.

  • Sunflower Seeds - These mild, but nutty seeds give these muffins a nice, delicate crispness without being too much and intense.

  • Sunflower Seed Butter - The star of this muffin recipe! While I would highly recommend using sunflower seed butter, you can of course tweak it a bit.

  • Dark Chocolate Chips - The more the better!!!!!! Use small chocolate chips, as they are easier to mix with the rest of the ingredients.


Banana Sunflower Seed Butter Muffin Tips

  • Bake - Due to the banana and flax eggs, these muffins may take a while to bake completely. So if you still feel like they need some extra time, give another 10 minutes.

  • ‘Eggs’ - The banana and flax seed eggs serve as egg substitutes and are perfect for these muffins as they give them a juicy fluffiness.

  • Swap the seed butter - While sunflower seed butter works great, you can swap it out with any of your other favorite seed or even nut butters. For example, we also tried almond butter and it still tasted great!

  • Rising - The muffins will rise as they bake, so don't pour the batter all the way to the top of the pan.



Ingredients

Easy - 6 muffins - 50min to 1h
  • 2 Bananas

  • 2 Flax Eggs

  • 1 cup Oat Flour

  • ½ cup Non-Dairy Milk

  • ⅓ cup Sunflower Seed Butter

  • 1 tsp Baking Powder

  • Sunflower Seeds

  • Dark Chocolate Chips, lots


Instructions

  1. Preheat the oven to 350, prepare the flax seed eggs and grease a muffin pan.

  2. In a medium bowl, mash the bananas and add all wet ingredients. Mix.

  3. Add the rest of the ingredients and mix again.

  4. Pour the batter into the greased muffin pan.

  5. Bake muffins at 350°F for 45 minutes.

  6. Enjoy either straight out of the oven or allow them to cool.
