This is the creamiest pasta sauce ever! Classic Alfredo Sauce is a simple yet elegant creamy, white sauce originally made with butter, cream, and parmesan cheese. Although I have never really liked cheese or any cream sauce with pasta, this sauce is one of my favorite sauces now! While this recipe might look time consuming, it is actually done in only a blink of an eye and therefore the perfect weeknight meal. However, this recipe has one more surprise for you left. While we often like to use coconut cream in rich recipes, this sauce is actually made out of cauliflower and vegan whipped cream. The ultimate pasta sauce when you're looking for something new, comforting, and just delicious!
Alfredo Sauce Ingredients
Cauliflower - Cauliflower is the main ingredient in this amazing tasting sauce. The cauliflower gives the sauce its light, creamy and airy consistency.
Silk Dairy-Free Whipping Cream - Whipping cream adds a unique creaminess to this sauce.
Peas - While it's not technically necessary to use peas in the sauce, it just adds more flavor and color to the whole dish.
Lemon Juice - The acidity of lemon juice and zest sharpens the other flavors in this recipe.
Nutritional Yeast - Adding nutritional yeast to this recipe works great as it gives this sauce a nice, subtle cheesy note. It also serves as a thickening agent.
Alfredo Sauce Tips
Silk Dairy-Free Whipping Cream - We recommend using Silk's Dairy Free Whipping Cream as it goes perfectly with this recipe. It's made from a coconut base, which you won't taste in the sauce though.
Sauteing - Sauteing onions and garlic brings out the flavor of both of these ingredients.
Blending - Be sure to blend the cauliflower, onion, and garlic until they're really, really smooth and there aren't any clumps, so the sauce mixes well afterwards.
Serve - Serve the sauce with freshly cooked pasta and ground black pepper. And for a little cheesy note, you can also sprinkle some nutritional yeast over your pasta to complete the dish.
Ingredients
Easy - 4 servings - 20 minutes
½ Onion
4 Garlic cloves
½ Cauliflower
1 cup Water or Vegetable Broth
1 ½ tbsp Nutritional Yeast
½ Lemon Juice
½ cup Silk Dairy-Free Whipping Cream
½ - 1 cup Peas
Salt & Pepper to taste
Instructions
In a medium saucepan, sauté the onion and garlic. Add the diced cauliflower and water or vegetable broth. Let the cauliflower cook until tender.
Set the stove to low heat and blend until smooth.
Now add the nutritional yeast, lemon juice, whipping cream, peas, pepper and salt. Stir to mix everything evenly.
Combine with your favorite pasta and enjoy!
